Abstract:
T he cellulose w as ext racted from solid state leavening of A usamii. The crude product w as purified by ( NH4) 2SO4 and chromatographed by Sephadex G- 200 column gel. T he CMC component of cellulose is 6 times of raw product s. The study on the enzymology of CMC enzyme show s that the best react ion temperature is 60 ℃ , pH is 4. 0, and enzyme is relat ively stable at 30~ 60 ℃ . The 90 % act ivity can be held in pH is 3. 0~ 5. 0 for 30 min at 50 e . There are IR spect rum absorpt ion bands of O ) H, N ) H, C ) H, C O. The values of CMC ( K m, v max ) w ere 0. 10 g/ m and 0. 40 mg/ ( ml#min) respect ively.
